Background of the Study

Food safety regulations are crucial to ensuring that food served in restaurants is safe for consumption. In Gombe State, as in many parts of Nigeria, the restaurant industry plays a significant role in providing meals to both locals and visitors. However, the enforcement of food safety regulations in the restaurant sector is often weak due to inadequate monitoring, limited awareness, and inconsistent adherence to the guidelines by restaurant owners and staff (Ibrahim & Usman, 2023). Non-compliance with these regulations can lead to the spread of foodborne diseases, which remains a public health issue in Nigeria. This study seeks to evaluate the level of compliance with food safety regulations in restaurants in Gombe State, to understand the factors influencing compliance, and to propose strategies to improve food safety standards within the restaurant industry.

Statement of the Problem

Restaurants in Gombe State face significant challenges in complying with food safety regulations. These challenges include lack of proper training for staff, poor sanitation, insufficient resources for maintaining hygiene, and weak enforcement by regulatory bodies. As a result, non-compliance with food safety regulations in restaurants may contribute to foodborne diseases and undermine public health. There is a need to assess the extent of compliance with food safety regulations in restaurants in Gombe State, as well as the barriers to compliance.

Objectives of the Study

  1. To assess the level of compliance with food safety regulations among restaurants in Gombe State.
  2. To identify the factors that influence compliance with food safety regulations in restaurants in Gombe State.
  3. To recommend strategies for improving compliance with food safety regulations among restaurants in Gombe State.

Research Questions

  1. What is the level of compliance with food safety regulations among restaurants in Gombe State?
  2. What are the factors influencing the compliance of restaurants with food safety regulations in Gombe State?
  3. What measures can be implemented to improve compliance with food safety regulations in Gombe State's restaurant industry?

Research Hypotheses

  1. Restaurants in Gombe State have low compliance with food safety regulations.
  2. Factors such as inadequate training, poor infrastructure, and lack of enforcement contribute to non-compliance with food safety regulations among restaurants.
  3. Implementing stronger enforcement measures and providing food safety training will increase compliance with food safety regulations in restaurants in Gombe State.

Scope and Limitations of the Study

This study will focus on restaurants in urban and semi-urban areas of Gombe State. The scope will include an assessment of the level of compliance with food safety regulations, the identification of contributing factors, and the formulation of recommendations. Limitations may include the reluctance of restaurant owners to cooperate, as well as challenges in accessing data from informal eateries that may not adhere to regulations.

Definitions of Terms

  • Food Safety Regulations: The set of guidelines and rules that govern the handling, preparation, and storage of food to prevent contamination and ensure safety.
  • Compliance: The extent to which restaurant owners and staff adhere to established food safety regulations.
  • Foodborne Diseases: Illnesses caused by consuming food that is contaminated with harmful bacteria, viruses, or chemicals.
